Human Nutrition Degrees

The mission of the Human Nutrition MPH program is to prepare graduates for leadership roles in local, state and federal health agencies, educational institutions, community health organizations, hospitals and clinics.  The program provides study of nutrition science, nutrition and disease states and community/public health nutrition.

In addition to the general public and environmental health education provided by the SPH and EHS Cores, students will acquire advanced knowledge and understanding about:

  • Nutritional sciences, including the biochemistry of cellular nutrition.
  • Application of nutrition sciences to individuals, groups and populations.
  • Factors that affect accessibility, adequacy and safety of the food supply system (production, processing, distribution and consumption) and the relationship to community food systems assessment and analysis.
  • Relationships between food intake, nutrition, contaminant exposure and biological and chemical hazards.
  • Federal, regional, state and local government structures and processes involved in the development of public policy, legislation, regulations and delivery of services that affect food intake, nutritional status and population health.

The MS degree is geared for students seeking research careers and serves as a doctoral preparatory program, in effect, while also providing sufficient coursework in core nutrition topics to qualify graduates for professional practice should they not continue on to the PhD program.

Faculty resources, expertise, and program coursework support three focus areas within the nutrition doctoral program: (1) Molecular and Biochemical Nutrition, (2) Nutritional Epidemiology, and (3) Nutritional Interventions.
