Shrimp and Shiitake Mushroom Pizza

Prep: 20 minutes. Bake: 32 minutes
Ingredients
1 16-ounce loaf frozen bread dough, thawed
1 egg white
1 tablespoon water
1/4 cup toasted pine nuts or slivered almonds
1 cup Parmesan Pizza Sauce (see Recipe)
1 cup chopped fresh spinach
1/2 pound fresh or frozen peeled and
deveined shrimp, cooked and halved lengthwise
1 cup sliced fresh shiitake or white mushrooms
1 cup shredded Swiss cheese (4 ounces)
Directions
1. On a
lightly
floured surface, roll bread dough,
into a 14 x 10-inch rectangle. Transfer dough to a lightly greased
large baking sheet. Build up edges slightly; score edges with a knife,
if desired. Prick generously with a fork. Combine egg white and water;
brush over dough. Bake in a 375° F oven for 20 to 25 minutes or until
light brown.>
2. Stir pine nuts or
almonds into
Parmesan Pizza Sauce; spread over
hot crust. Top with spinach, shrimp, and mushrooms. Sprinkle with Swiss
cheese.
3. Bake about 12
minutes more or until
cheese melts and pizza is
heated through.
